Nutty Rice Salad

  • 2 cups of brown rice cooked
  • 1 ½ cups of raw peanuts (or use 1 tin of chickpeas drained for those with allergies)
  • ¾ cup sultanas
  • 1 chopped green pepper
  • 1 cup cooked peas
  • 1 tsp soy sauce
  • ½ tsp turmeric
  • 1 tsp mixed spice
  • ½ tsp coriander
  • 1 tsp curry powder
  • 1/3 cup extra light olive oil
  • ¾ cup salt-reduced tomato sauce

Combine all ingredients, mix well and refrigerate for 1 hour.
