Nutty Rice Salad

- 2 cups of brown rice cooked
- 1 ½ cups of raw peanuts (or use 1 tin of chickpeas drained for those with allergies)
- ¾ cup sultanas
- 1 chopped green pepper
- 1 cup cooked peas
- 1 tsp soy sauce
- ½ tsp turmeric
- 1 tsp mixed spice
- ½ tsp coriander
- 1 tsp curry powder
- 1/3 cup extra light olive oil
- ¾ cup salt-reduced tomato sauce
Combine all ingredients, mix well and refrigerate for 1 hour.
